Denmark's famous Noma restaurant in Copenhagen will reopen this August, but star chef Rene Redzepi will step into a less active culinary role. Known for his avant-garde Nordic cuisine, Redzepi will now focus on sustainable projects involving insects, seaweeds, legumes, fungi, and technology.
The New York Times reported on allegations of staff mistreatment by Redzepi, surfacing incidents from 2009 to 2017. Redzepi partially acknowledged these reports, expressing regret for any harm caused. He will take on a creative role as the restaurant reinvents itself.
Pablo Soto, employed since 2017, will take over as head chef, while Mette Bring Soberg becomes head of research and development. According to Noma's website, the prix-fixe menu including wine will cost 6,500 Danish crowns ($1,000), with a juice alternative offered at 6,000 crowns.
