Researchers from Stanford University examined the molecular effects of a plant-based diet, which excludes all animal products, on gene behaviour without altering the DNA itself.

Specifically, the study focused on 21 pairs of adult identical twins, with one twin following a vegan diet and the other an omnivorous diet. After eight weeks, the team observed younger hearts, livers, inflammatory markers, and metabolic systems in the vegan participants.
