The market for beef tallow, worth an estimated $480 million in 2023, is experiencing growth as companies move to adopt this once unfashionable fat. Fast-food chains like Steak 'n Shake are switching to cooking with beef tallow, and salad chain Sweetgreen is replacing seed oils with alternatives like olive and avocado oil.

This shift, however, has generated controversy. Critics, such as the Center for Science in the Public Interest, argue that Kennedy's promotion of animal fats could overshadow health risks associated with saturated fats. Yet, Kennedy's position gives him the platform to influence dietary guidelines and exert pressure on the industry.
