The Uttar Pradesh government has launched the 'One District One Cuisine' (ODOC) initiative to boost local vegetarian cuisines through enhanced branding and market reach. However, the exclusion of iconic non-vegetarian dishes like Lucknow's Galouti kebabs and biryani has sparked criticism among food connoisseurs and historians.
Critics argue that such omissions narrow the state's culinary identity, which is renowned for its diverse and flavorful offerings. Food historian Pushpesh Pant condemned the all-vegetarian ODOC list, calling it a 'half-baked move' and questioning the rationale behind selective discrimination against non-vegetarian fare.
Despite the controversy, government officials maintain that the scheme focuses on promoting signature vegetarian dishes to empower local artisans and boost employment. The initiative resembles the successful 'One District One Product' model and aims to position Uttar Pradesh as a cultural and culinary hub.
